A single origin from Mexico, sourced from smallholder producers in northern Chiapas, grown around 1,000 metres where low altitude produces large beans, smooth body, and low acidity. Decaffeinated using the Mountain Water Process — water from Mexico’s highest mountain naturally removes 99.9% of caffeine while preserving the coffee’s full character. No chemicals, no compromise. Bourbon, Caturra, Typica, and Catuáí varietals, roasted to a medium profile to highlight milk chocolate warmth and brown sugar sweetness.
