Most coffee sits in a warehouse for weeks before it reaches you. Ours doesn’t.

Roasting to order means we don’t roast a batch until someone has ordered it. No stock sitting on shelves slowly going stale. No “roasted on” date that’s already three weeks old when the bag arrives.

Why freshness matters more than most people realise

Coffee is at its best between 5 and 21 days after roasting. During this window, the CO₂ released during roasting has settled, the flavours have developed, and the coffee is at peak extraction. Before 5 days it’s too gassy; after 3–4 weeks the complexity starts to fade.

When you buy from a roaster holding stock, you have no way of knowing where in that window your coffee sits. When you buy roasted to order, you know exactly when it was roasted — because it was roasted for you.

What this means for your venue

Fresher coffee extracts more consistently. Your baristas will notice it in the espresso — better crema, more stable shots, more forgiving on grind adjustment. Your filter customers will taste it in the clarity of the cup.

It also means you can order smaller quantities more frequently, rather than buying in bulk and watching quality decline. For a venue serving 2–5kg a week, that’s a meaningful difference.

The trade-off

Roasting to order means a short lead time — typically 2–3 working days from order to dispatch. It’s not next-day. But for venues that plan their ordering a few days ahead, it’s a straightforward rhythm that delivers consistently better coffee.
